HONEY SOY PAD THAI & virgin mojito
ingredients:
PAD THAI
rice pad thai noodles
carrots
honey
gf soy sauce
snow peas
green capsicum
courgette
onion
fried shallots
garlic
ginger
bamboo shoots
baby corns
olive oil
MOJITO
mineral water
mint
ice
lime
instructions:
prior to cooking: marinate vegetables and tofu in honey, soy, ginger & garlic.
boil water. place the rice pad thai noodles into the boiling water. boil for 6-8 minutes. remove from heat.
add 2 tsp of olive oil to a wok/frypan. add onions. once onions are light golden brown add in the marinated vegie and tofu. leave to cook for approx 20 mins.
strain noodles and add into wok. add another tsp of olive oil and cook through. enjoy!
